Long-Depaquit

In 1791, the Depaquit brothers purchased the ancient vines from the Abbaye de Pontigny.

In later years, the family relocated to the elegant 18th century chateau and winery in the heart of Chablis. Since 1970, the domaine has been owned by the Bichot family from Beaune and is now managed by winemaker Louis Gimonnet.

Long-Depaquit owns 10 hectares in five of the seven Grand Cru vineyards, as well as La Moutonne – an anomaly, nestled in the heart of the amphitheatre of the Grand Cru vineyards, that has been acknowledged since the Middle Ages, despite never appearing in the official classification

Domaine Long-Depaquit’s vineyards are managed using sustainable methods in order to respect the environment, the soils and also the workforce. Soils are tilled, although some vineyards, such as Vaudésir, are so steep that winches are used to pull the ploughs up and down the slopes. Natural solutions are used to obtain healthy grapes that are the best reflection of their terroir. Long Depaquit have dramatically reduced their frost protection systems, preferring heated wires, which have a lesser impact on the environment.

Louis Gimonnet is a firm believer in a “non interventionist” approach to create authentic, mineral, elegant wines. Cold settling is used to protect the aromas and flavours.

Oak ageing is carefully dosed and delicate batonnage may be used, depending on the vintage. Wines are aged on fine lees for 10 months before they are blended and left to age for a further six months in tanks until bottling.
